They’re difficult to remove, and because the gums are added to such a wide variety of products, they’re hard to avoid. And with the trend towards healthier eating, they’re becoming more and more common. Guar and locust bean gums are a key component of many diet foods. In 2017 alone, 684 new low-fat/low-sugar food products with guar and locust bean gum launched in Europe (Mintel Global New Products Database).

Mannanases at work – see a mannan stain disappear

Because mannan molecules are formed of long chains of sugars, their stains are difficult for detergents to remove.

Mannanase enzymes attack mannan stains by cutting mannan molecules into tiny sugars that dissolve in the wash water. Detergent can now lift the mannan stains away from the fabric.
